My side dish contribution to the church Thanksgiving Meal held on Veterans Day, 11/11/2018. It was a bit early and it came really fast. But pretty much everything got eaten up.
SEASONED CREAMED CORN
2 cans of creamed corn
2 cans of fresh corn
1 can of seasoned peas
Put all of the cans of corn in a dish to cook together. When you get the corn/peas out of the can make sure to drain the fluids then to wash the items in the can before putting it all together in a pot to cook. It is ok to microwave it all together too. They need to cook @ 5-6 minutes.
Cook or microwave (if precooked) 1/2 package to a full package turkey bacon. (Any sort of bacon or meat can be used as a seasoning)
How much bacon you put in depends on how much seasoning you are seeking to do. Also you can use any sort of bacon you wish so long as it is cooked. I am going for a more healthy approach so am using turkey bacon. But for more traditional cooks, you can use cured or brown sugar bacon which has more flavor. Precooked turkey bacon can be cooked in a microwave. More traditional cuts of bacon would likely need to be cooked in a pan or broiled depending on the sort of cut of bacon that is being prepared.
Add the bacon meat to the pot/dish of the mixed corns and seasoned peas. Cook together for @ 5-6 minutes. This is to help the flavors of the bacon to get infused into the corn.
Next seasonings are being added to provide more flavors.
Add 3 table spoons of salt to the pot/dish of corn with bacon(I used the pink himalayan salt from Costco; but I'd encourage you to use a higher grade salt or sea salt if at all possible for flavor reasons)
Add quarter cup of black pepper to the pot/dish of corn with bacon
Add 3 table spoons of turmeric to the pot/dish of corn with bacon
Add a half cup of dried onion chips( or real diced onion) to the pot/dish of corn with bacon. I used dried onion chips from Costco. But diced onions will do the same thing. The goal is for the onions to add flavoring to the dish.
Stir the corn with bacon and seasonings together. After stirring a few minutes, you are to cook it all together for another 5-7 minutes. This is to allow everything to dissolve and to flavor the corns. Things may start to boil a little. But it is best to make sure you have a lid or cover on the beans when you are cooking all of the ingredients together.
After they cook, let them sit for @ 5-10 minutes to cool down or let sit to get to a desired temperature then eat.
FOR A COOL DISH.... You would need to refridgerate this @ 4-5 hours to serve as a cold dish like a cold corn salad.
