PASTA ALFREDO WITH SPINACH N PEAS; HOLIDAY TAKEHOME FOOD GIFTBAGS.... nice afterservice meal day and next week the Christmas Potluck

All went well at church and afterservice. I got blessed called a "point of light" today. The sermon was more Hannukah focused on HOPE how one night of oil lasted 8 days and believe me when I say in my family there are times we've stretched dollars like that, especially Grandma. But the meaning of the Hannukah lights was the focus. My church tries to have an interfaith bent. Sometimes we do Passover with a Jewish congregation. ==== 
=== On the food front, Larry my co-coordinator on things afterservice brought in a beef veggie soup, another lady who is vegetarian and widowed brought in a dish of green beans, boiled potatoes and onion which was very tasty. I made and brought my mixed beans with wienies (recipe posted a previous week) and also made Penne Alfredo With Spinach n Green Peas. I also did @ 15 carryout gift sacks with a meal to go in them.

PENNE ALFREDO WITH SPINACH AND GREEN PEAS
1 package of penne. Cook the penne @ 12 minutes and I put @ 8 tablespoons of himalayan salt in the water to promote the penne not sticking to each other. Drain water then place noodles in a pot or second cooking dish.
Add 1 can of spinach.
Add 1 can of green peas.
Cook the spinach and green peas in a dish together. I seasoned them with a light sprinkling of black pepper, himalayan salt and paprike.
In a 3rd dish, combine the penne noodles and the cooked spinach and green peas. STIR. After stirring, I added the whole bottle of alfredo sauce. The alfredo sauce I used had a few chunks of diced chicken but not too many. 
STIR and mix the penne, spinach, green peas and alfredo sauce. COOK everything together for an additional 10 minutes. Let cool.
If serving hot, you can serve.
If serving as a pasta salad, let it cool for @ 4 hours.
I usually cook on Saturday then put the dish in a large tupperware container after cooling, then I heat it up when I get to church on Sunday then put in an aluminum serving dish and let the penne dish bake in the over for @ 20 minutes then just keep in oven to keep warm til the dish is served.

CARRY HOME HOLIDAY FOOD BAGS
... Some weeks we were giving out of food because some folks were putting too much food in carryout boxes so the folks at the end of the line did not get to eat. So she thought we should have some sorta gift bag with a meal or two for folks to take home to be charitable and so folks in line can eat too. So it has been a few weeks doing these things and usually they are all taken. Some by homeless. Some by older or disabled folks in the congregation who have trouble getting out or preparing meals. Some who are income challenged in lower paying jobs where folks are earning like $10 an hour and there is not much left after paying rent and healthcare. It is a mix of folks.
1 or 2 boxes of chicken salad, ham salad, tuna salad and/or chicken salad-- I put a post it on each bag that says what is in there but I mix it up and try to have diverse offerings
2 treats--- usually it is 2 of the same thing or 1 of each offering I have that week as I buy what Costco has on special usually--- peanut butter cracker treats or rice krispy treats or breakfast bars (peanut butter or chocoloate chip)
1 pouch or carton drink (usually apple juice or orange juice) but this week I had some gift food bags that did not have drinks
