COOKING FOR CHURCH RECIPES FROM RECENT WEEKS: Potatoes O'Brien; Homemade Mac n Cheese; Beans n Weenies

CHURCH RECIPES FROM RECENT WEEKS....
Potatoes O'Brien
I bought frozen potatoes O'Brien from the store which is basically diced potatoes with onions and green peppers but I added things to originalize this. I added 2 cans of diced potatoes, some chopped red onions, some dried onion chips, and half a package of diced up cheddar cheese then I baked it for 45 minutes rather than cooking it in a pan.... I refridgerated it then heated it back up for 30 more minutes when I got to church. It was all eaten up at church so much so I did not even get to eat any of it.

Mac n Cheese.. homemade style
Boil 2 boxes of elbow macaroni adding 10 teaspoons of sea salt to the water to promote the pasta sticking less while boiling
After boiling drain off the water... I boiled the pasta for 15 minutes in the microwave...
I was not able to open up my jar of cheese sauce so what I ended up doing was getting a package of cheddar cheese and mixing it into the elbow macaroni and making homemade mac n cheese with real cheese
After stirring in the real cheese, I added some seasonings
1/3rd cup of milk
5 tablespoons of turmeric
10 tablespoons of himalyan sea salt
10 tablespoons of black pepper (this is to have a more smoky taste to the cheese; if you are not into the cheese having a smoky taste then I'd suggest using less black pepper or even no black pepper)
Stir all of the ingredients into the elbow macaroni and cheese then microwave for 10 minutes... check on the dish every 3-4 minutes to make sure the cheese is mixing in and not foaming or bubbling
After 10 minutes remove and stir then taste test.... after this step you will add more shredded cheese and seasonings to get it to the taste you are trying to achieve
.. if you want it cheesier then add about a third more cup of cheddar cheese shredded and stir in and cook more adding about an 1/8th cup of milk
... if you want the cheese taste to be smokier then add more black pepper
... if you want the mac n cheese to have more zing then add more turmeric
... if the noodles are too bland then add more himalayan sea salt

Pork n Beans with Weenies
3 cans pork n beans
1 can red kidney beans
2 cans of diced wienees
1/2 cup of sweet n smoky bbq sauce
10 tablespoons of black pepper
4 tablespoons of himalayan sea salt
1/4 cup dried diced onions
1/2 cup diced onions
3-4 tablespoons of turmeric
I cooked the diced onions for about 3-4 minutes then put them in the base of my microwaveable dish. After that I added all of the beans and stirred.
Then the bbq sauce, pepper, dried diced onion and himalayan sea salt were added.
Stir to mix the ingredients. Then cook for 15 minutes in the microwave.
After cooking all of these ingredients do a taste test. Usually this is when I will add 3-4 tablespoons of turmeric for seasoning
Then adjust to the taste you are seeking to get.
I prefer a smoky bean flavor so I usually season with a few more tablespoons of black pepper.
But if you prefer a sweeter taste then you could add brown sugar or sweet bbq sauce.
After the beans have the right flavor then add the diced weenies.
I usually rinse the weenies thoroughly before adding them to the beans and spices to ensure there are no preservatives on them.
Add 2 cans of diced weenies to the cooked beans with spices. Cook for 5-8 minutes. Then the dish is ready to serve or to chill and serve later if you are making a cold beans n weenies dish.
