new summer recipes: GARLIC CORN SALAD and COCONUT RICE W' VEGGIES

GARLIC CORN SALAD: I tried out a new recipe for church. It was well received.
1 can cream corn
1 can sweet yellow corn
1 small bottle of diced garlic
Mix the cream corn, sweet yellow corn and garlic into a dish and cook them together for @10 minutes to allow the garlic flavor to get infused into the corn
The next step is up to you if you desire to put any meats or other seasonings into the dish.
I cooked 5 pieces of turkey bacon the sliced them up small and put it in the garlic corn. Then I cooked an additional 5 minutes for the meat flavors to infuse.
After that I added @ 1/8th cup of black pepper, @1/8th cup of sea salt.
This is a colorful tasty dish. This dish can be served warm or cold. I served the dish cold with diced turkey bacon. But the dish can be served warm also.

COCONUT RICE W VEGGIES: Again a new dish that was well received.
2 packages of coconut flavored rice
1 package of garlic rice
Combine the rice. Add water to the rice per instructions. Boil the rice for @ 15-20 minutes until rice is cooked. light and fluffy.
Add @ 8 tablespoons of diced garlic with garlic juice
@ 1/4th stick of butter or margarine (butter works best for flavor reasons but margerine can work also.
1 cup of sweet peas--- wash peas then add to the rice
1 cup of sliced mushrooms-- was mushrooms then add to rice
You may want to consider what type of flavor you are going for when you add the mushrooms. I added white mushrooms. But the flavor will vary with the mushroom
Stir/ combine the rice, garlic, butter and vegetables.
Add 1/4th cup of lemon pepper
Add 1/8th cup of black pepper
Add 1/8th cup of sea salt
Stir/combine. Cook all the ingredients together for @ 5 minutes to infuse flavor.
Season to taste after cooking the ingredients together to infuse flavor. This involves adjusting for lemon pepper, black pepper, sea salt, garlic oil, olive oil to get to the desired taste.
This is a colorful dish that can be served warm or cold. I served it warm at church after baking the dish an additional 20 minutes to maximize the infusion of flavors. The final dish is like a fragrant saffron rice with lemon garlic infusion. I did not really taste a lot of coconut flavor to the rice as the final dish has more of a lemon butter, garlic flavor to it. But it was all eaten and enjoyed.
