my chili for the chili cook-off: Mixed Beans Mixed Meat Chili

Each year the youth have a chili cook off fundraiser for their projects and fiedltrips. Below is my entry this year.

MY CHILI---- Mixed Beans Mixed Meat Chili (pictured)
1 can chili beans
1 can red kidney beans
1 can creamed corn
1 can black beans
Cook beans together for 10 minutes--- to get best flavor add a few cubes of ham or some other pork type meat
separately make 4 cups of cooked rice then add to the mixed beans-- make sure to drain the rice of any excess water before adding; rice should be light and fluffy but cooked
add 2 cups of diced pepperoni
add 1 chicken smoked sausage cooked then diced up--- chicken sausage should be cooked separately then diced up and added to the mixed beans and rice
mix beans, rice and meats and stir
Cook for 5 minutes--- the goal is for the flavor of the meat to get infused into the beans .....
Take out and let cool a few minutes
add half cup of dark chili powder
add quarter cup of BBQ sauce
add black pepper as needed for seasoning (I am making a mild chili so I added @ a quarter cup of black pepper)
Stir and mix then cook everything together for @ 15-20 minutes
Let cool for 5 minutes, stir then serve
Season to your liking--- this recipe is for a mild flavored slightly smoky taste with a light zing; if you prefer a stronger flavor and more zing then I'd suggest doubling to tripling the amounts of chili powder and black pepper used
