CINCO DE MAYO at Church Afterservice Meal/ Gathering


CINCO DE MAYO AT CHURCH--- After service, we had a nice celebration with multiple Mexican soups, some vegetarian Mexican dishes and some really good desserts especially the Mexican Wedding cake bites --- These recipes were MY FOOD ITEMS for the pitch-in w' a Cinco de Mayo theme... I put together my twist on some things I've seen on Triple D on FoodNetwork that inspired recipe creativity... POTATOES HUEVOS w Meat and Vegetarian styles... and my twist on Jamon y Queso with Ham n Pepperjack Cheese sliders

Potato Huevos With Meat
(I used chicken in my recipe but you can use any meat you wish)...
4 cans of diced canned potatoes
1 can of sliced potatoes
Place the sliced potatoes on the bottom and sides of a medium large baking dish. I coat the baking dish with olive oil. After adding the potaotes, I add:
1 bag of frozen diced onions
1 can/cup of cooked chili beans
1/3rd cup of tangy BBQ sauce
1 can/cup of chicken chili- I used a can of chicken chili that had onion and green pepper seasonings
a light coating of 1/3 cup of black pepper and 1/8th cup of sea salt, and Mexican cheeses
Add 2 cans of diced potatoes on top
Add another coating of 1/8th cup of black pepper, 1/8th cup of turmeric, 1/8th cup of sea salt
Add a coating of Mexican cheeses
Add the last can of diced potatoes
On top of that I added 1/3rd cup of liquid egg whites, 1/8th cup of black pepper, a coating of Mexican cheeses, 1/8th cup of sea salt
On top add a coating of smoky BBQ sauce
Cook for @ 2 hours in the oven at 350 degrees F.
Usually you will start to smell this @ 90 minutes in. After that you need to monitor to get the dish to the desired level of cooking. I like for the potatoes to be cooked thru and a bit crisp so I usually cook for 2 hours then turn off the oven and let it sit for @ 30-45 minutes before taking out of the oven. But if you prefer potatoes softer then you might not want to cook for 90 minutes then turnoff the oven and get it out in @ 30 minutes later.
VEGETARIAN POTATOES HUEVOS
The recipe is similar. However, there are key substitutions.
NO MEAT, CHICKEN CHILI, CHILI BEANS
INSTEAD THE MEAT AND CHILI BEANS WERE REPLACED WITH: BLACK BEANS, YELLOW CORN, MUSHROOMS
for a meatless and mild taste

I also made some slider sandwiches---
.... HAM W PEPPERJACK CHEESE sliders
(aka cold version of a jamon y queso sandwich)

Take some small rolls or cut some bread chunks into slider sized bread. I had sliders that were @ 2in x 2 in but the size can vary. Slice the roll in half. Place a small slice of pepperjack cheese on the bread then I added 2 thin slices of precooked sliced smoked ham in between. I used normal sized slices and folded them so there would be a lot of meat and a bit of cheese in relation to the slider bread size.
