MOTHERS DAY 2019: A great food spread with starter plants to embrace the "mothering" "nurturing" spirit for positive growth...

MOTHERS DAY 2019 AT UNITY CHURCH...
...Larry, my co- after service meal person, brought a beautiful Mothers Day cake that looked and tasted really great. I made a few dishes.... Smoked Turkey Sliders, Beans n Weenies, Ravioletti (miniature raviolis) with Vegetables (mushrooms/peas) in Dill Alfredo Sauce, and a Slider Bar with choice of BBQ beef or diced crabmeat to put on your slider bun with cheddar cheese or no cheese and someone brought in some hamburger buns that I added to the slider bar....Everything got eaten....We had a few leftover donuts but everything else was eaten. And I had the carryhome bags for the homeless, nearby community and those who need to take something home like some of the older and disabled in the congregation for whom cooking is impossible to difficult for medical reasons. Some got more than usual as Walmart did subs for the tuna salad kits with tuna salad lunch kits. This morning I saw where Walmart had charged me more and when they sub I'm supposed to be charged the original charge but when I called they saw that and it was handled in about 2-3 minutes. I just felt the folks at the store working yesterday were unethical or just not paying attention to accuracy because I had ordered 6 pack plastic bottle Ginger Ale then they have half can size small ginger ale 6 packs in the bags. I complained and told them that is not what was on the website then they went and got what they were supposed to have gotten. Usually they do better but the girl yesterday was in a hurry saying she had someone else waiting and I told her to go help them and I went thru my order like I usually do because most of it is for church and I have designated bags in my minivan for church stuff. Then I get Mom's seafood salad she likes. One good thing is Walmart had a Mothers Day bag which I had them give to Mom and she like that a lot.

Sweet n Smokey Beans n Weenies
I varied my own recipe. I got a nice compliment today too. Some said the beans n weenies are always great as I strive for it to always be great.
3 cans of pork n beans
1 can of light kidney beans
Rinse the beans off when they come out of the can then put them in your cooking dish
Add 1/2 cup of BBQ sauce (used smoky brown sugar bbq sauce). Then add 1/3rd cup of diced onion (Sometimes I use real onions but used Costco onion chips today).
Add 1/4th cup of black pepper
Add 1/8th cup of garlic salt or sea salt
Stir. Cook for 8 minutes.
After cooking, taste then season to taste and your desires.
I added 1/4th cup of maple syrup as I was going for a sweet n smoky dish today. I find it works best to cook then add the sweet and mix it in, then to cook some more to better solidify the smoky taste before adding in the sweet flavor.
Cook for an additional 8 minutes after adding the syrup.
2 cans of diced weenies-- Rinse the weenies and cook them separately for 2 minutes before adding to the beans.
Now that everything is cooked put in a medium-large baking dish. Bake the beans n weenies at 350-400 degrees F for @ 20-30 minutes then let it simmer a few minutes then serve.

Slider Bar- Smoked Turkey, Shredded Beef, Crabmeat flakes
1 package of rolls-- I buy white rolls and Sweet Hawaiian rolls
Open up the package of rolls and cut thru the middle of each roll.
Sliced cheese into @ 2in x 2 in squares--- I used cheddar cheese slices that were sliced to be the size of the rolls
There is no set size here; basically the cheese should be cut to conform to the size of the slider bread or roll that you are using
After slicing the rolls and placing a slice of cheese on each slider/ roll, I then place 2 thin slices of smoked meat on the slider/roll to make the sandwich
This week I used smoked turkey and cheddar cheese but in past weeks I have used smoked ham and pepperjack cheese on sliders.
Today I also had shredded beef and crabmeat pieces out by the sliders with some empty slider/rolls and small sliced cheese so that folks could create their own slider sandwich to taste if the smoked turkey was not their thing and they were more beef or seafood inclined.
I also bought an extra of the seafood salad that my Mom likes and thought we'll put some crabmeat chunks out and see if they are eaten. They were all eaten and some used to make sliders too. The shredded beef was commercially bought, heated up and placed out so folks could spoon it onto their slider.

Ravioletti with Dill Alfredo Sauce
We have @ 20% vegetarians at church, and also many older congregants have diabetes so we have to have vegetarian options that do not have meat.
Ravioletti is just small ravioli. It was on sale at a store and so I bought it since it was cheaper than regular ravioli and it was stuffed with cheese.
Boil the hot water with sea salt for @ 5 minutes. Basically you should estimate how much water you boil. It should be enough water to cover the pasta then @ 1/4inch overage.
After heating the water with sea salt, add the ravioletti and cook for @ 15 minutes. You should start checking @12 minutes to see how well cooked the pasta is then boil to desired pasta texture.
After the ravioletti is cooked to your satisfaction, drain the excess water from the pot. Some folks will drain and put the pasta in a different dish. I tend to just drain the water and use the same dish to keep cooking in.
Wash and rinse the mushrooms (@ 8 ounces) and the can of peas (unsalted). Then add to the pasta/ravioletti.
Stir the peas and mushrooms to spread them into the ravioletti.
Add 1 can or bottle of alfredo sauce.
Add seasonings.
Add 1/8th cup of black pepper, a tablespoon of turmeric, 1/4 cup of cheese ( I added some smoked cheddar cheese), 2 tablespoons of garlic salt
Stir the pasta, peas, mushrooms and seasonings together in a large dish. After mixing, cook for 10-15 minutes.
After cooking, season to desired taste. For example, if you want it to be cheesier then add more cheese; or for a more smoky flavor add more black pepper or liquid smoke.
After cooking add dill seasoning on top then stir and mix in. Because the dish is already hot, you do not necessarily need to cook the dill. I used dill flakes-- @ 1/8th cup of dill flakes.
Mix well.
I baked the dish with all the ingredients for @ 20-30 minutes for the flavor to infuse more but that is not a necessity.

INTERESTING CHURCH SERVICE TOO... MOTHERS DAY STARTER PLANTS WITH SEEDS....And for church, the minister gave us all starter plants to plant a seed literally, something I've been doing as I have cabbages and lettuces starting to bloom from seeds I planted @ 4-6 weeks ago, especially the purple cabbage. The goal is for us to tap more into the "nurturing" and mothering spirit to propel self growth and for us to be people who help things to grow in a good way for ourselves and others. Mom and I will be planting our starter plants in one of Mom's gardening sections here at the 2nd family home.
